The Name

Mazarine

The word 'Mazarine' carries a quiet depth. It is, first, a colour — a deep, luminous shade of blue drawn from the sea and sky, associated for centuries with royalty, rarity, and refinement. The name traces to Cardinal Mazarin, chief minister of France in the seventeenth century, patron of the arts, and founder of the Bibliothèque Mazarine, France's oldest public library. The Mazarin Cut diamond remains the progenitor of every precious cut known today.

Mazarine's menus honour the heritage of French coastal cuisine — the gastronomic traditions of Brittany, Provence, and the Atlantic shore — interpreted through decades of classical technique and the finest seasonal produce.

With fish and seafood as the focal point, the menu offers an exacting repertoire: Croque Mazarine — our signature croque monsieur with black truffle and blue lobster — alongside Salade Niçoise Classique, Poulpe à la Béarnaise with beetroot preserve, Raviole de Crabe in a lobster and lemongrass broth, and the theatrical Bar en Croûte de Sel, whole sea bass baked in a salted crust. Our raw bar presents the finest oysters, langoustines, sea urchin, and Imperial caviar.

The kitchen is led by Chef Thierry Laborde, whose career spans the most celebrated French kitchens of the past three decades — from Le Louis XV in Monaco to Le Gavroche in London, and a Michelin star of his own at L'Oranger.
